Sweet potatoes are known for their decadence and are often served with tons of butter and sugar. ~Delicious but not something you should eat very often.~ To get all the benefits of this healthy vegetable without the drawback of saturated fat and sugar, enjoy them savory and with olive oil. Serve with eggs for breakfast or with some chicken and salad for dinner. You can't go wrong.
Step One Chop veggies. There are no specific measurements here. It's just what you like, how hungry you are, and how many people you are feeding. A good rule of thumb is 1/2 - 1 sweet potato per person. Use as much onion and garlic as your heart desires. Step 2 Heat pan to medium high. Just enough olive oil to coat the bottom of the pan. Step 3 When the pan’s warmed up, add just the potatoes. Sprinkle with seasonings of choice. I use salt, pepper, garlic powder, onion powder, turmeric, and paprika. Toss once after seasoning and let sit in the pan for a few minutes. Tip Don’t stir too often, or the oil will just get soaked up by the potatoes. You wanna let the oil crisp the potatoes and not just soak in. Sometimes you have to add a little bit more oil. Just keep the bottom of the pan coated. Step 4 Add onions and more salt and pepper. Toss and let sit for a few more minutes. Step 5
Cook until onions are done and enjoy.
